Sfoglia alle mele

Tanto tempo fa provai a realizzare a casa le melizie, quei dolci di sfoglia che si mangiano all'autogrill e che sono tanto sfiziosi.
Il risultato mi piacque molto e da allora ho cercato di perfezionare la ricetta per renderle ancora più buone di quelle che si trovano in commercio e, secondo i miei degustatori di fiducia (mio marito e le mie figlie), ci sono riuscita.
P.S.: preparatevi perché sono in fase di sperimentazione convulsiva e quest'autunno, e tutto l'inverno prossimo, vi bombarderò di dolci con le mele!

Ingredienti:
1 rotolo di pasta sfoglia da 230g
200g di mele golden
80g di zucchero
il succo di mezzo limone
1 uovo

Procedimento:
per prima cosa passo la sfoglia dal frigo al congelatore per una trentina di minuti per renderla più rigida e nel frattempo preparo il ripieno delle mie sfoglie alle mele.
In una casseruola metto lo zucchero e le mele tagliate a dadini piccoli (circa 1cm per 1cm o anche meno) precedentemente irrorate con il succo del limone e lascio cuocere a fiamma moderata per 5/7 minuti.
Inizialmente si creerà una salsina, ma capirete che è arrivato il momento di spegnere il fuoco quando le mele si saranno ammorbidite e la salsina si sarà quasi del tutto asciugata.
Spegnere il fuoco e mettere le mele con il loro sciroppo in un contenitore e aspettare che si intiepidiscano.
Riprendere la pasta sfoglia dal congelatore e con un coppapasta di 10/12 cm di circonferenza ricavare dei cerchi che diventeranno la base per il nostro dolce.
Cospargere su metà di ciascun cerchio un paio di cucchiaiate di mele e richiuderci sopra l'altra metà dopo averla spennellata con dell'uovo battuto, si otterrà la classica forma a mezzaluna.
Spennellare con l'uovo battuto anche la superficie delle mezzelune ottenute ed infornare in forno già caldo a 190gradi per 9/10 minuti.
E' importante controllare costantemente il grado di colorazione delle sfoglie di mela poiché anche un minuto in più di cottura potrebbe farle scurire troppo.
Prima di servire, consiglio di cospargere sulla loro superficie una pioggia abbondante di zucchero a velo.

Queste sfoglie di mela sono buonissime sia calde che fredde!

A long time ago I tried to make home-made melizie, those desserts that are eaten at the autogrill and that are so tasty.
I liked the result very much and since then I have tried to perfect the recipe to make it even better than those found on the market and, according to my trusted tasters (my husband and my daughters), I succeeded.
P.S .: get ready because they are in a phase of convulsive experimentation and this fall, and all the next winter, I will bombard you with apple desserts!

Ingredients:
1 roll of puff pastry 230g
200g of golden apples
80g of sugar
the juice of half a lemon
1 egg

Method:
first step the dough from the fridge to the freezer for about thirty minutes to make it stiffer and in the meantime prepare the filling of my puff pastry with apples.
In a saucepan, put the sugar and the apples cut into small cubes (about 1cm per 1cm or less) previously drizzled with lemon juice and cook over a moderate flame for 5/7 minutes.
Initially you will create a sauce, but you will understand that it is time to put out the fire when the apples have softened and the sauce will have almost completely dried.
Turn off the heat and place the apples with their syrup in a container and wait for them to cool.
Pick up the puff pastry from the freezer and use a 10/12 cm circle pastry to make circles that will become the basis for our dessert.
Sprinkle a couple of spoonfuls of apples on half of each circle and close the other half over it after brushing it with beaten egg, you will get the classic crescent shape.
Brush with the beaten egg also the surface of the half-moons obtained and bake in preheated oven at 190 degrees for 9/10 minutes.
It is important to constantly check the degree of coloring of apple sheets because even one minute more than cooking could make them darken too much.
Before serving, I recommend sprinkling plenty of powdered sugar over their surface.

These apple sheets are delicious both hot and cold!

  2. Abbinamento mele e sfoglia mi garba proprio tanto. Forse uno tra i miei dolci preferiti! Nei miei ci metto anche un po' di cannella ma io non faccio testo perchè amo tanto la cannella e la ficco ovunque :D Buona giornata
